Ingredients
4-5 Potatoes of your choice - bonus points for sweet potatoes
Turkey sausage
1 Red bell pepper
1 Green bell pepper
Monterey Jack cheese
Onion powder
Garlic powder
Paprika
Black Pepper
Preparation
Step 1
Start by heating your oven to 350 degrees. Line a baking sheet with aluminum foil and spray with a little oil to avoid sticking.
Step 2
After washing your hands with warm soap and water, be sure to wash your potatoes and bell peppers as well.
Step 3
Begin by cutting the potatoes in whichever way you desire - I like to cut them in small cubes. Try to keep the sizing as consistent as possible to make sure they cook evenly. After transferring your now-diced potatoes to a mixing bowl. Clean your cutting board and knife or use new items. Begin cutting the top (stem) out of your bell peppers and dicing it into small pieces. Once you are done transfer them to a separate mixing bowl as well.
Step 4
Allow the ancestors to guide you as you season your potatoes. Remember cooking is experimenting, trial and error. If you over-season or under-season your potatoes - remember and make adjustments for next time. (Pro tip: you won't need TOO much seasoning as the ground turkey sausage has herbs and spices already mixed in, the bell peppers will add flavoring as well!).
After giving your potatoes a good mix - making sure they are covered with seasoning, I recommend cooking them in the air fryer at 350-400 degrees for about 15 minutes, depending on how crispy you want them. You may want to give them a nice shaking mid-way through the cooking process to ensure they are cooking evenly. If you do not have an air fryer- you're missing out (lbs) you can always cook them in the oven or any way you like.
Step 5
As the potatoes finish up add them bit by bit to the baking sheet. As the potatoes are cooking, add a little oil to a hot skillet and begin to cook your bell peppers (I like them wilted down). Once the bell peppers have reached your desired texture, add your turkey sausage to the same skillet and cook to your liking. (Note: I can't tell you how many times the store didn't have turkey sausage, in its place - you can use ground turkey, however, you will need to season the heck out of it- trust me. If you are watching your sodium salt-free or low sodium seasoning options are available.)
Step 6
Once all your potatoes are done and your turkey sausage is complete. Combine potatoes, bell pepper, and turkey sausage combo on the baking sheet. Be sure to give it a good mix, spreading everything around.
Step 7
Add your favorite cheese, Monterey Jack cheese is gonna hit every time. Be sure to mix the cheese in, if you don't - it will cause clumps and those are annoying! Place the baking sheet into the oven and warm for about 10 minutes - really just to melt the cheese.
Step 8
Once the cheese is melted to your liking, remove from the oven. I like to top mine with hot sauce, but you do you and enjoy!
